Alas, I can't remember which writer once exclaimed in her local greengrocers, "Oh, I always love seeing the first Cox of the season!"

But they're here in my local farm shop, stone-hard and rusty-skinned and acidic and wonderful.

I am bringing home paper bags full and aiming to achieve a surfeit of apples.

What will you do with them?

Eat them as is. None of them have ever survived long enough for me to try anything more complicated.

If I have a lot, I might reach to the dizzying culinary heights of "eat with some cheese."
